Cocktail of the Week: Pineapple Rum Sour

Stamford Nub News has joined forces with a regular reader to share a 'Cocktail of the Week' feature.

Hello everyone, Josh here. Apologies for my absence last week. I was on holiday - enjoying some cocktails and climbing Snowdon!

Anyway, on to the cocktail...

This week's cocktail is the Pineapple Rum Sour. Sours first appeared in the 1800s, and are a staple in classic cocktail bars across the world. They commonly use lemon or lime juice, sugar syrup, a spirit of your choice and egg white. Vegans can substitute the egg white for aquafaba, the liquid found in a tin of chickpeas - trust me on this one!

You will need:

  • 50ml of pineapple rum
  • 25ml lemon juice
  • 25ml pineapple juice
  • 1 egg White

Method:

  1. Add all of your ingredients to a Boston shaker and 'dry shake' to combine and create froth
  2. Add ice cubes and 'wet shake' shake to chill
  3. Strain and serve in a long glass
