Stamford Nub News has joined forces with a regular reader to share a 'Cocktail of the Week' feature.

Hello everyone, Josh here. Apologies for my absence last week. I was on holiday - enjoying some cocktails and climbing Snowdon!

Snowdon is the tallest mountain in Wales and the second tallest in the UK. This time of year, you will meet many walkers doing the Three Peaks challenge. Image credit: Josh Tooley.

This weekend, a regular Nub News reader is climbing Snowdon for charity. Read more here.

Anyway, on to the cocktail...

This week's cocktail is the Pineapple Rum Sour. Sours first appeared in the 1800s, and are a staple in classic cocktail bars across the world. They commonly use lemon or lime juice, sugar syrup, a spirit of your choice and egg white. Vegans can substitute the egg white for aquafaba, the liquid found in a tin of chickpeas - trust me on this one!

You will need:

  • 50ml of pineapple rum
  • 25ml lemon juice
  • 25ml pineapple juice
  • 1 egg White

Method:

  1. Add all of your ingredients to a Boston shaker and 'dry shake' to combine and create froth
  2. Add ice cubes and 'wet shake' shake to chill
  3. Strain and serve in a long glass

Enjoy!

Check back next week for another Cocktail of the Week, shared each Friday to get the party started.
