Stamford Nub News has joined forces with a regular reader to share a 'Cocktail of the Week' feature.

This week, Josh is bringing you a fluffy pink cocktail to keep the Barbie vibes alive, as the buzz around the new film dies down. 

The Pretty in Pink is a sweet and sour-style drink that is enjoyable as a dessert - or with a dessert, if you've got a particularly sweet tooth. The foam is made with egg white or aquafaba, the starchy liquid that you find in a can of chickpeas.

We had a chickpea and sweet potato curry last night, so this cocktail was an attempt at using the leftover water in a fun way. If you don't like chickpeas though, egg white will do the same job.

This was a favourite with my partner, so I hope that you enjoy it too.

Ingredients: 

  • 50ml cranberry juice
  • 50ml aquafaba or egg white
  • 25ml trip sec or Cointreau
  • 50ml gin
  • Generous squeeze of lemon

Method:

  1. add the cranberry juice, aquafaba, trip sec and gin into a shaker
  2. shake hard for 20 seconds
  3. add ice and shake for another 10 - 20 seconds to chill
  4. add one large ice cube to a tumbler and squeeze over your lemon juice
  5. strain your cocktail over the ice, being sure to shake the foam out on top
